Fab Fit Friday Fajitas

Have the girls over for movie night or just don't know what to cook that is delicious AND healthy!? Try these healthy fajitas! You wont even know the difference. You will be able to keep that waistline and eat yummy! You can also use the left overs for some awesome meals the next day!


  • Four 100 Calorie 100% Whole Grain Tortillas
  • Original Cooking Spray
  • Packet of Low Sodium Fajita Seasoning Packet
  • 24 Oz Cooked Shrimp
  • 1 Large Green, 1 Yellow, 1 Orange, 1 Red Bell Peppers
  • 1 Medium Onion
  • 3 Cups Chopped Broccoli
  • 4 Slices Reduced Fat Pepper Jack Cheese


  1. Cut up Onion, Broccoli, and peppers and add them to a skillet on Medium high. (Make sure pan is greased with Spray)
  2. Add Packet of Low Sodium Fajita Seasoning
  3. Cook for 6 minutes , then add in Shrimp and Stir frequently
  4. Cook until the shrimp is glazed and brown
  5. Add slices of pepper jack cheese and mix until melted. 
  6. Split the fajita filling onto four tortillas
  7. Roll fajitas into burrito forms and lay them on the skillet to brown! I served with brown rice!

The next day take the left overs and cut it all up into a fajita stir fry and sprinkle a little rice on top!

Fab Fit Friday: Healthy Holiday Appetizer

So it's the time of the year that we can't hardly wait for! It's also the time of year many dread! This season my parents are throwing a huge holiday party at our house! They have decided to make all the foods healthy! Tomorrow I'm going to be up baking and preparing food with my mom all day! Here is one of the Party appetizers we are going to offer!

Shrimp Sandwich Poppers!
All it is, is Romaine lettuce, Shrimp, Chow Mein Noodles and Village Hearth bread!

  • 1Tbsp Chow Mein Noodles
  • 4 Medium Cooked Shrimp
  • Pieces of Romaine Lettuce
  • 2 Slices Village Earth Bread

70 Calories 13g Carbs 9g Protein 1g Fat

Inspiration Wednesday: Nintendo

The end of the year is almost here and while most people celebrate it I fight it....With everything I've got. I am so beyond not ready for the new year it's not even funny. I mean just today I headed out to Target to get some wrapping paper for our office gift exchange (hence the late post today) and I literally lost it when I saw Valentine's Day decorations on sale. What the what?!? Seriously, I haven't even pretended to wrap my presents yet and Cupid has already kicked Santa out of the way! What is that about?!

I love change and I tend to go with the flow but I don't like to be rushed. When rushed I tend to plant my feet and refuse to let change happen so of course today's Inspiration Wednesday doesn't look to the future or even to the present. Nope I'm going back a decade or two to the original gaming system. Yep. In case you don't recognize it that is the predecessor to the Xbox, PlayStation and online gaming--Nintendo! 

The colors are perfect for December and since I think Christmas needs to be celebrated in December for the whole month, today's outfit is perfect for any holiday parties you have coming up.

Fab Fit Friday: Windsor Wonderland Coconut Truffles

Windsor Wonderland Frozen Coconut Truffles

45 calories 3g Protein 15g Carbs 3g Fat
Serving Size 1 Coconut Truffle


  • 1 Sixteen Ounce bag of unsweetened shredded coconut
  • 1/3 Cup Stevia
  • 4 Drops Sky Blue Food Coloring
  • 1/3 Cup Almond Breeze Unsweetened
  • 1 Tbsp Vanilla Extract
  • 2 Servings Fat Free Sugar Free Vanilla Instant Pudding made with Almond Breeze
  • Instant Pudding FF/SF White Chocolate 

How To:

  1. In a Mixer blend together coconut, stevia, food coloring, vanilla extract, Vanilla pudding. If mixture is to soupy add more coconut.
  2. Let the mixture chill for 30 minutes in the cooler
  3. Roll 1 Tbsp Balls of the coconut and dip into the White Chocolate Pudding
  4. Set on freezer rack for 2 hours.

Inspiration Wednesday: Snowboarder's Delight

First, please let me apologize for these late posts. We are gearing up for prom at work and working on a ton of really fun things for you (think MAY-JAH giveaways and pretty dresses!) and well the days have gotten away from us. We should be back to our regularly scheduled posting soon; at least I hope so.

Anywho, I have been dreaming about this view and aching to head up to Bear Mountain to get some runs in. In my opinion the season ends way too soon but what can you do. Mind you, I love snowboarding but whether I am any good is up in the air. I call it victory if I go a full day without a faceplant. I guess we all can't be The Flying Tomato but it sure is fun trying to be lol. Since I can't head out to the snow I am going to bring the snow to me. I used the colors off this amazing picture from and they're perfect.

They're not stark white and they're perfect for Winter. Now be aware that this is SO not what I would wear to go snowboarding, well maybe what I would drive up in and have my hot cocoa in since these jeans are beyond comfy. The heels may have to go but at least I can wear them here.

Must Read Monday: Shatter Me by Tahereh Mafi

You guys know I'm a sucker for a good dystopian story right? Well I think I found my new series! I had heard about this book coming out and that it was a great book for those of us that loved the Hunger Games. At first I was like yeah right puh-lease. Every new series is the new Hunger Games. As you can tell I was actually thinking that this book wouldn't live up to the hype and that I would be disappointed because it wasn't the Hunger Games and yet it was being marketed to those readers. Man oh man was I wrong because I loved this book!

What It's About:
As I already mentioned this book is a dystopian story that is based around Juliette. Here is the summary that was listed on Goodreads:
Juliette hasn't touched anyone in exactly 264 days. 
The last time she did, it was an accident, but The Reestablishment locked her up for murder. No one knows why Juliette's touch is fatal. As long as she doesn't hurt anyone else, no one really cares. The world is too busy crumbling to pieces to pay attention to a 17-year-old girl. Diseases are destroying the population, food is hard to find, birds don't fly anymore, and the clouds are the wrong color. 
The Reestablishment said their way was the only way to fix things, so they threw Juliette in a cell. Now so many people are dead that the survivors are whispering war-- and The Reestablishment has changed its mind. Maybe Juliette is more than a tortured soul stuffed into a poisonous body. Maybe she's exactly what they need right now. 

Why You Should Read It:
I know you guys are probably sick and tired of me saying "because it's so good!" but it is! More than anything I love that this series is a little different than anything I've read lately. Yes, I know I just read a book last week about a guy whose touch kills but this book is different, I promise. Whereas Touch is about a guy whose touch kills, the book is set in present day and the whole premise is that the sixes are people who were born with this ability and then capture for exploitation. In Shatter Me, Juliette is unique and no one has any idea why she is the way she is. The book is beautifully written and it almost reads like poetry. I absolutely love Adam and everything he has done to be with Juliette. I think the part that I loved the most about this book is that it broke my heart in a good way. Authors have a magnificent way of letting words make us feel and Tahereh is not an exception. I highly recommend this book if only for how beautifully she expressed Juliette's grief and fear and hope.

Fab Friday Fun: Fit Friday Forgets

TGIF, doesn't always apply when you are SUPER busy. Saturdays can be just as hectic as Mondays, and this definitely applied for me yesterday!

Fridays are my favorite days to get a great work out in before the weekend, because most likely my weekends will be spent relaxing on the couch!

Yesterday I spent the entire day baking, cleaning, shopping, crafting, ect. I had absolutely no time to work out! After I sat down on the couch around 11pm I felt more exhausted than after an intense workout. So I did a little research, I realized that my 7 hours of baking, 2 hours of shopping, 2 hours of crafting, and 4 hours of cleaning burnt around 1300 calories according to Just because you aren't "working out" doesn't mean you aren't burning those calories! The days you are super busy don't feel bad if you can't fit in a work out, because most likely you have worked off more than a usual trip to the gym! If you continue to eat healthy and stay active you will be in great shape! Mentally and Physically!

While I was baking I made sure that I had a very healthy breakfast to prevent me from eating scraps of cookie dough and other food. I also kept a bowl of healthy snacks by me at all times, If I felt the urge to eat then I grabbed the bowl of snack sand ate anything I wanted. In my snack bowl I had blueberries, an apple, almonds, dates, a fig, and Kiwi.

 For the Winter Wonderland Party we are having tonight there will be many people! The desert table is full of temptations and that is why I have to keep healthy snacks around at all times. Today we are working on the party food : Mac and Cheese, Little Smokies, and Tossed Salad.....Can you guess which one I am indulging in :)
