Windsor Wonderland Frozen Coconut Truffles
45 calories 3g Protein 15g Carbs 3g Fat
Serving Size 1 Coconut Truffle
- 1 Sixteen Ounce bag of unsweetened shredded coconut
- 1/3 Cup Stevia
- 4 Drops Sky Blue Food Coloring
- 1/3 Cup Almond Breeze Unsweetened
- 1 Tbsp Vanilla Extract
- 2 Servings Fat Free Sugar Free Vanilla Instant Pudding made with Almond Breeze
- Instant Pudding FF/SF White Chocolate
- In a Mixer blend together coconut, stevia, food coloring, vanilla extract, Vanilla pudding. If mixture is to soupy add more coconut.
- Let the mixture chill for 30 minutes in the cooler
- Roll 1 Tbsp Balls of the coconut and dip into the White Chocolate Pudding
- Set on freezer rack for 2 hours.
