Fab Fit Friday: Windsor Wonderland Coconut Truffles

Windsor Wonderland Frozen Coconut Truffles

45 calories 3g Protein 15g Carbs 3g Fat
Serving Size 1 Coconut Truffle


  • 1 Sixteen Ounce bag of unsweetened shredded coconut
  • 1/3 Cup Stevia
  • 4 Drops Sky Blue Food Coloring
  • 1/3 Cup Almond Breeze Unsweetened
  • 1 Tbsp Vanilla Extract
  • 2 Servings Fat Free Sugar Free Vanilla Instant Pudding made with Almond Breeze
  • Instant Pudding FF/SF White Chocolate 

How To:

  1. In a Mixer blend together coconut, stevia, food coloring, vanilla extract, Vanilla pudding. If mixture is to soupy add more coconut.
  2. Let the mixture chill for 30 minutes in the cooler
  3. Roll 1 Tbsp Balls of the coconut and dip into the White Chocolate Pudding
  4. Set on freezer rack for 2 hours.
