Friday Fit Fry

Friday Fit Fry!

Thank goodness it's Friday! Here is the recipe I made for tonight dinner! It's a perfect light dinner made just for the nights I want to cuddle up on the couch after school/work and not move a finger! This recipe is perfect served over brown rice so make sure you have some on hand!

1 Cup Carrot Slices
1 Cup Diced Fresh Pineapple
1 Orange Bell Pepper
1 1/2 Green Bell Pepper
1 Yellow Bell Pepper
1 Orange Bell Pepper
3 Cups Medium Cooked Shrimp
1 Bunch Scallions
2 Jalapenos (optional)
1 Can Water Chestnuts
1/2 Cup Low Sodium Teriyaki Sauce
1 Cup Broccoli

Chop up all the ingredients except the shrimp they way you like yours cut and mix them together with Teriyaki sauce.

Add 1/4 Cup Teriyaki sauce to cooked shrimp and let marinate for fifteen minutes.

Grill marinated shrimp until lightly browned.

I cooked the jalapenos separate and added them to mine. Some people don't like the spice so just have these optional on the side.

Cook all the vegetables on high until they are sauteed. This takes about 10-15 minutes.

Once all the vegetables are cooked down, add shrimp and cook another 3 minutes on high.

Time to eat!

2 Cups is a serving size!
