Halloween is literally just around the corner. I plan on making a trip home this Halloween to spend time with my family. My parents usually make a giant fire pit and hand out candy. I wanted to create a healthy Halloween treat to serve on Halloween night, instead of indulging in numerous pieces of candy.
All you need :
- 2 boxes of sugar free vanilla pudding prepared with skim milk
- 1 cup pumpkin puree
- 1/2 tsp orange food coloring
- 1/2 tsp yellow food coloring
- 4 tbsps cup chopped pecans
- Fat Free Reddi Whip
- Halloween Sprinkles
After preparing pudding, combine with orange food coloring and pumpkin puree.
Evenly distribute pumpkin mixture into two parfait dish.
Top pumpkin layer with 1 tbsp of pecans in each dish.
I bought these little glass dishes at Target for $1.64!
Next, mix yellow food coloring in with the remaining vanilla pudding.
Evenly distribute the pudding on top of pumpkin layer in each dish.
Top each dish with the remaining pecans.
Top with fat free Reddi whip for a light topping.
Add any style of Halloween sprinkles!
