Winter is almost here and I am all about the Holiday flavors! One of my favorite flavors is peppermint. Last night for dinner my parents were all craving something sweet, so I whipped up a delicious cookie cake with a healthier twist than your normal cookie cake.
- 1/2 Cup Almond Flour
- 1/2 Cup Whole Wheat Flour
- 1/3 Cup Unsweetened Cocoa Powder
- 1 Teaspoon Baking Powder
- 1/2 Teaspoon Baking Soda
- 3 Packets Truvia
- 1/2 Banana
- 1/4 Cup Mashed Avocado
- 1 Large Egg
- 1/4 Cup White Chocolate Chips
- 1/4 Cup Dark Chocolate Chunks
- 20 Crushed Sugar Free Peppermints
- 1 Tsp Vanilla Extract
- Cooking Spray
Preheat oven to 350 degrees. Mix together all ingredients in an electric mixer. Stir in: peppermint, white chocolate chips and dark chocolate chunks. Spray a pie pan with cooking spray and pour dough into pan. Press down evenly and cook 25-35 minutes or until toothpick comes out clean.
Slice into 8 pieces.
