Fab Fit....Day: Peppermint Chocolate Cookie Cake

So we had some technical difficulties on Friday and weren't able to get the post up on time but once you look at the pictures of this yummy cake we hope you'll forgive us. Nothing says I'm sorry quite like chocolate does ;)



Winter is almost here and I am all about the Holiday flavors! One of my favorite flavors is peppermint. Last night for dinner my parents were all craving something sweet, so I whipped up a delicious cookie cake with a healthier twist than your normal cookie cake. 






  • 1/2 Cup Almond Flour
  • 1/2 Cup Whole Wheat Flour
  • 1/3 Cup Unsweetened Cocoa Powder
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 3 Packets Truvia
  • 1/2 Banana
  • 1/4 Cup Mashed Avocado
  • 1 Large Egg
  • 1/4 Cup White Chocolate Chips
  • 1/4 Cup Dark Chocolate Chunks
  • 20 Crushed Sugar Free Peppermints
  • 1 Tsp Vanilla Extract
  • Cooking Spray


 



Preheat oven to 350 degrees. Mix together all ingredients in an electric mixer. Stir in: peppermint, white chocolate chips and dark chocolate chunks. Spray a pie pan with cooking spray and pour dough into pan. Press down evenly and cook 25-35 minutes or until toothpick comes out clean. 




Slice into 8 pieces
Per Slice : 168 Calories, 6g Fat, 25g Carbs, 9g Sugar, 4g Fiber, 2g Protein
