Mel's Munchie Monday: Easy and Healthy Cupcakes!

Cupcakes as easy as 1…2…3!

A certain someone in the office requested these, so these are just for her! You will NEVER know they’re DIET cupcakes! I promise!

Ingredients: 1 box of Strawberry Cake mix, 1 16oz jar of vanilla frosting & a 2 liter bottle of Diet Sierra

Mist OR Diet 7-Up. That’s it! …Really!

First, pre-heat your oven to 375°. Empty the Strawberry Cake mix into a large mixing bowl. Add 1 ½ cups of Diet Soda. I usually add a half cup at a time to ensure the batter isn’t too runny. If it starts to look to thin, add a little less.

Slowly beat the mixture until fully incorporated. Usually 2-3 minutes. I use my standing mixer for

everything, but you can use a handheld mixer, or a whisk.

Add approximately 2 tablespoons of cake batter into a lined cupcake tin. I use an ice cream scoop; it

helps make them an equal in size.

Bake the cupcakes for about 10-12 minutes. I suggest checking on them periodically to ensure they

don’t over-bake. To check if they are fully cooked, gently poke one of the cupcakes with a toothpick,

if it comes out clean, they’re done. If it comes out with batter on it, they need a little more time. Once

they’re done, allow 20-30 minutes to cool. Use a baking rack if you have one!

Once the cupcakes are completely cooled, add frosting to each one.

I love making this recipe and you’ll shock people when you tell them they’re made with diet soda! The best thing is, these only have about 150 calories and 5 grams of fat each! To cut cals even more, try using Whipped frosting, or none at all!
