Mel's Munchies: Holiday Chex Mix

Holiday Chex Mix!

This recipe is easy, yummy & great for entertaining!

Ingredients: 6-7 cups of Rice Chex Cereal (you can substitute for Wheat or Corn Chex Cereal if you prefer), 2 cups of pretzels, 1-1 ½ cups of milk chocolate M&M’s, 1-1 ½ cups of raisins, festive sprinkles and white chocolate melts (as an alternative, you can also use a 12 oz bag of white chocolate chips with 1 tablespoon of shortening).

There are no rules with this recipe so you can add more or less of anything. You can even throw in other ingredients like other types of cereal, nuts, marshmallows etc.

First, you’ll need to melt the chocolate in a large saucepan. Use low heat so you don’t scorch the chocolate. Stir often. If the chocolate gets too hot, it will get clumpy.

Once the chocolate is completely melted, add the Rice Chex cereal.

Next, add the pretzels, M&Ms, raisin, and several shakes of sprinkles. Again, you can add as little or as much as you want. You don’t have to measure!

Once you’ve added all the ingredients, begin to fold the mixture together so every piece is coated with the melted white chocolate. Do not stir or you will crush the ingredients. A little crushing will happen but for the most part you want to keep the ingredients intact.

Now, the mixture needs to harden. To help the process, you’ll need to spread it into a thin layer. You can use 2 large baking sheets or cake pans. This recipe makes A LOT, so you may even need 3!

Once the mixture has cooled, and hardened, use a spoon to break into chunks.

You can serve this holiday mix in a festive tin or bowl, or in cup cake liners. Cup cake liners are great for single servings and holiday parties! Enjoy!
