This is one of my go to looks because it's simple and put together without having to spend a ton of time on it. Pairing a colorful silk blouse with black skinny jeans gives you a perfect place to start any look. From there you can add cute booties, a scarf and a leather jacket and you're good to go.

Mel's Munchie Monday: Pumpkin Spice Cupcakes!

Here at Windsor we're a veritable treasure trove of skills. Our Operations Assistant Manager, Melissa is well known for her healthy eats but we came to find out that she is also a great baker! Of course we had to share her skills and we asked her if she'd be up for some posts and she agreed. Judging by the taste of this recipe we're all in for a treat. I guess we'll just have to be the guinea pigs and try all of her yummy recipes so that only the best goes up on the blog. Le sigh...What we do for our customer's ;)



Pumpkin Spice Cupcakes

This is one of my favorite recipes! It’s quick, it’s easy, and best of all, its low calorie & oh so yummy! Can’t beat that, right?!

Ingredients: 1 box of Spice cake mix (I prefer Betty Crocker Super Moist brand), 1 15oz can of Libby’s Pure Pumpkin, ¼ teaspoon Pumpkin Pie Spice (optional), and 1 16oz jar of vanilla or cream cheese frosting (any brand). 

Makes 18-24 cupcakes (depending on the size)


First, pre-heat your oven to 375°. Combine the cake mix, pumpkin and ¼ teaspoon Pumpkin Pie Spice. I used my standing mixer but a handheld works just as well.

Beat until everything is thoroughly combined. Scoop about 2 tablespoons into a lined, cupcake baking pan. You can put more or less batter depending how large you want these to be! I use a small ice cream scoop to get the same amount of batter into each liner.

I usually bake these for 15-20 minutes. This can vary so I usually start with 10 minutes and add a little time as needed. If you over-bake them, they won’t stay moist.
I usually eye-ball them to see if they’re done but you can also use the toothpick trick! Gently poke one of the cupcakes with the toothpick, if it comes out clean, they’re done. If it comes out with batter, they need a little more time. If you don’t have toothpicks, no worries! You can also use a butter knife...it just leaves a bigger hole, but you can cover it with frosting!

Add frosting to each cupcake once they’re completely cool. I usually allow 20-30 minutes to cool. If you get impatient and frost them while they’re warm, the cupcake usually flakes off as you spread the frosting. But if you’re impatient and just want to devour them, go ahead! :)

Now dig in and ditch the guilt! These cupcakes only have about 150 calories each and under 5 grams of fat! YUM!

Fab Fit Friday: Peachy Strawberry Protein Smoothie

Smoothies all year for me! 
When I get back to the home base, I'll make them more seasonal. There are ten more days left until the kitchen and I reunite. I can't wait to jump into Holiday mode. I dug this smoothie from the recipe vault to share. My favorite component in this smoothie is it's thickness. It has almost the same consistency as soft serve ice cream or fro-yo! 
Ingredients:
*1 Cup Whole Frozen Strawberries, *1/2 Cup Frozen Peaches, *1 Cup Unsweetened Coconut Milk, *1 Cup Ice, *1/2 Tsp Vanilla, *1 Packet Stevia or 1 Tbsp of Honey, *1 Serving of Vanilla Protein Powder. (I use Biochem, Vega, or GeniSoy), 
Blend all ingredients together! 
What I love about this smoothie is that it's perfect for a post workout fuel. Most protein bars are well over 250 calories with only 10-20 grams of protein and they are not as filling. I am always hungry after a protein bar. Don't get me wrong! I love protein bars because they are good for quick fixes and leave no clean up labor after. But if If I had to choose, it would be a smoothie! 
210 Calories (depending on your protein powder), 20g Carbs, 5g Fat, 28g of protein, 5g of fiber, and 13g of sugar!

One of our favorite things about the season is that, without fail, plaid or tartan (whatever you want to call it) makes a comeback. This year our inner 90s child is rejoicing that plaid tops and Docs are back in. Serious comfort in fashion can be so rare. However, as much as we love the grunge and comfy look, it isn't the most polished look. We asked Sara of LovebyLynn.net to style a few items and we absolutely love how she paired everything together. That necklace gives the perfect finishing touch and our inner 90s child can rejoice in her docs.
