Mel's Munchies: Fluffy Funfetti Cookies

What's better than Funfetti cake? ...Funfetti cookies!
'Cuz everything is better with sprinkles! 

Ingredients: 1 box of Pillsbury Funfetti Cake Mix, 1 egg, 1/2 stick unsalted butter, 8 ounces of Cream Cheese (I use whipped to reduce calories!), 1/2 c powdered sugar, and sprinkles (any color).

Add the cream cheese and butter (softened) into a large mixing bowl. I use a standing mixer but a whisk or handheld mixer works well too!

Once fully incorporated, add the egg and mix together. 

Next, add the box of Funfetti cake mix and combine. 

Put the dough into the refrigerator for 30-45 minutes to chill. Cold dough is much easier to work with! Once chilled, roll dough into 1 inch balls.

Dip each ball into a bowl of powdered sugar and place on a cookie sheet. The cookies will expand as they bake so make sure to leave some space between each one.

Bake for 10-12 minutes on 350°. I like to check on them every 5 minutes or so to ensure they don't overcook. Everyone's stove heat can vary. :) They should be nice and soft on the inside and golden brown on the bottom once they're done. Enjoy!
